I don't do anything special - I chaptalize (adding brown sugar, honey or any other fermentable sugar to bring the original gravity up to the level I like) and pitch champagne yeast. After fermentation is complete, I add just enough sugar to bottle condition the cider. After several months of aging, it comes out lightly sparkling, clear, dry and crisp. It has a white-wine quality to it, although the aroma is definitely still apple-y. I think I'll make another batch after the holidays!
